I've seen cake mix cookie recipes floating around Pinterest for months and they have been making me drool. I decided to try to make some of my own and to make them super girly because there wasn't man in the house. (Don't tell our cat, Toby, I said that.) I baked vanilla cake mix cookies, dipped them into pink candy melts, and added sprinkles on top. My husband said that it looks like a unicorn farted on them. Mission success.
When I started baking the cookies, I wasn't convinced that making cookies with boxed cake mix was a good idea, but they turned out to be absolutely delicious. They are moist, light, and airy. The combination of the cake mix and the pink candy melts, which taste like white chocolate, is fantastic; they really enhance each other. Also, eating these cookies reminds me of my birthday parties when I was a little kid. What's better than that?
Ingredients
- 1 boxed vanilla cake mix
- 1 egg
- 1/4 cup oil
- 1/4 cup water
- 1/4 cup flour
- 1 bag pink candy melts/wafers (purchased at craft stores)
- Sprinkles
1. Mix cake mix, egg, water, and flour until combined.
2. Drop 2 Tbsp of dough at a time onto ungreased cookie sheet to form cookies.
3. Bake at 350 degF for 8 min.
4. Allow to cookies cool.
5. Heat candy melts/wafers in microwave for 30 sec at 50% power. Stir. Repeat until melts/wafers are melted.
6. Dip cookies into melted candy. Place cookies on top of wax paper.
7. Sprinkle sprinkles on cookies!
8. Allow candy melts/wafers to cool and harden.
Enjoy your cake mix cookies. These would be great for a girl's night or a little girl's birthday party. Alternatively, you could just make them for yourself, like I did. I enjoyed my cookies at the end of the day with tea in my kitty mug.
