Lucky Charms Cereal Treats

Well, top of the mornin' to ya!  It's that time of year again!  It's time to let my Irish heritage shine.  Happy almost St. Patrick's Day!

This year, I don't have much time to spend baking treats (I'm looking at you, Little Harp), so I've come up with a super quick recipe to celebrate the holiday.  I made marshmallow cereal treats, but instead of using Rice Krispies, I used Lucky Charms!  The end result just screams St. Patrick's Day.

The Lucky Charms cereal treats taste really similar to the traditional childhood treat, but they are a bit more sugary due to the additional marshmallows in the cereal itself. I don't know what kid wouldn't love these. Little Harp is obsessed.

You will need:

  • 6 cups Lucky Charms Cereal
  • 1 bag of mini marshmallow (approx 10 oz)
  • 3 Tbsp of butter 
  • Green sprinkles

Directions

1. Sort out about 1/2 cup of the colored marshmallows from the Lucky Charms cereal.  Set aside.  We'll use these marshmallows to decorate later.

2. Melt butter in a medium-sized saucepan.

3. Add mini marshmallows.  Stir continuously until the marshmallows dissolve into delicious molten goo.

4.  Pour marshmallow mixture on top of cereal.  Stir until combine.

5.  Pour mixture into a greased pan.  Pat down with a non-stick spoon or spatula to ensure even coverage.

6.  Sprinkle the 1/2 cup of Lucky Charms marshmallows from Step 1 and green sprinkles onto the treats.

Yummy!  Enjoy your easy holiday treat!  What are you going to be doing for St. Patrick's Day?  I'll be eating these and using green food coloring in all my beverages!

If you are feeling super festive, check out my End of the Rainbow Cupcakes from a couple years ago.  They look like a grassy knoll with a rainbow on top, and there are surprise golden nuggets in the middle!  These have made a couple of my friends jump for joy!
